Background:

This pigment is dark purplish-red power, it is easy to be dissolved in ethanol-water solution. It shows pink in acid solutions, purplish-red in neutral solutions and blue-black in alkaline solutions.

The natural food color is both relatively stable to light and heat in acid solution.
